📘 What is a Crumble

A crumble, sometimes called a “crisp,” is a dessert that consists of fruits baked in a dish and topped with a crunchy streusel topping. The topping is usually prepared with a mix of flour, sugar, butter, and sometimes oats.

A crumble can include just one type of fruit or a mix of different ones. We will prepare a crumble with apples, peaches, pears, berries, and bananas here.

🫐 Ingredient Notes

This straightforward recipe only requires fresh fruits, flour, sugar, and butter. Here is what you will need:

  • Apple – Any variety of apples will work. I personally like Golden Delicious or Gala as they become tender after baking, but you can use Braeburns or Honey Crisp if you prefer a firmer texture.
  • Pear – Conference, Williams, or Green Anjou. Again, use what you have on hand.
  • Banana – Use ripe bananas for extra sweetness.
  • Peach – If making this crumble in the summer, do not hesitate to use those juicy peaches or nectarines! Otherwise, you can replace peaches with other fruits if they are not in season.
  • Berries – Any berry will work. Here, I went with a mix of strawberries, blueberries, and raspberries.
  • Flour – All-purpose flour makes the base of the crispy topping. A 1:1 gluten-free flour mix should also work if you want to make it gluten-free.
  • Butter – You can use store-bought or homemade vegan butter.
  • Sugar – Preferably granulated white sugar. I advise against using coconut sugar as it would completely alter the flavor of the topping.
  • Vanilla extract – Optional. Vanilla extract adds extra flavor to the topping.

🥣 How to Make Fruit Crumble

Make the crumble topping

The streusel topping is a must and really takes this crumble to the next level by adding a crunchy and crispy layer that contrasts so well with the juicy fruits! To make the topping:

  1. Mix all of the ingredients. Add the flour, sugar, and diced butter to a mixing bowl. Using your hands, sand the flour and sugar with the butter. Alternatively, you can use a dough cutter for this step.
  2. Keep mixing. Mix everything until it forms a slightly crumbly “dough” and set aside.

Feel free to add your favorite spices to the crumble! Cinnamon, cardamom, or even ginger would work well!

Prepare the fruits

  1. Peel the fruits and cut the apples, pears, and peaches into 1-inch chunks. Slice the banana into thick slices.
  2. Next, transfer the diced fruits to a baking dish.

Assemble & Bake

  1. Transfer about 1 cup of the crumble to the diced fruits and stir to combine. This will sweeten the fruits and prevent the crumble from getting too juicy, keeping the streusel topping crunchy.
  2. Sprinkle the remaining crumble over the fruits. Try to make large crumbs as well for extra crunchiness.
  3. Bake for 40-45 minutes or until the crumble is golden brown.

🍨 What to Serve with Crumble

This crumble can be served warm with vanilla ice cream, whipping cream, crème Anglaise, or a dollop of coconut cream. You can also serve it chilled with vegan cashew yogurt!

📔 Tips

  • Use what you have on hand. You can use almost any fruit (except citrus fruits). This crumble recipe is a great way to use leftover fruits that are a bit too ripe.
  • Use cold butter. For a shortbread texture, make sure you are using cold butter when making the crumble topping.
  • Add texture. You can replace 1/4 of the flour with rolled oats for more texture and extra fiber. Feel free to include chopped nuts, such as almonds or hazelnuts, for a hint of nuttiness!

💬 FAQ

Can I make this recipe gluten-free?

While I haven’t tried it yet, any gluten-free flour mix should work.

What can I substitute for the white sugar?

You can use light brown sugar. I do not recommend coconut or brown sugar as their flavor would be overpowering.

Can I use frozen fruits?

Yes, frozen berries like raspberries, blueberries, or strawberries work perfectly.

How long does this crumble keep?

Crumble will keep for up to 5 days in the refrigerator.

Ingredients
 

  • 2 apples
  • 1 pear
  • 2 bananas
  • 1 peach or 2 kiwis
  • 1 cup berries I used a mix of raspberries, blueberries, and strawberries
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup vegan butter cold
  • 1/2 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C) and lightly grease an 11×7-inch baking dish.
  • Prepare the fruits. Peel the apples, pears, and bananas. Cut them into 1-inch cubes and transfer them to the baking dish.
    Pit the peach and cut it into 1-inch cubes as well. Transfer the peach and the berries to the baking dish.
  • Make the crumble: Whisk together the flour and sugar in a medium mixing bowl. Cut the cold vegan butter into 1-inch cubes and add it to the flour mixture. Add the vanilla extract if using.
    Using your hands or a pastry cutter, work the butter into the flour until coarse crumbs form.
  • Transfer 1 cup of the crumbles to the fruits and toss to coat. Arrange the fruits into an even layer.
  • Sprinkle the remaining crumble over the fruits. Try to make large crumbs as well for extra crunchiness. Do not press the crumble topping down.
  • Bake for 40-45 minutes or until the crumble topping is golden brown. Let cool for a few minutes before serving, or chill in the refrigerator for at least 4 hours if you prefer to serve it cold.
  • This crumble will keep for up to 5 days in the refrigerator.

    This fruit crumble recipe really made my day.
    We had been on holidays for a couple days and I wanted to cook something new yet good for my family. Then I tried this, and beyond my expectation, my husband who had never wanted to taste anything sweet before loved it. It was incredible.   3. Tips: i usually add ground cardemom and vanilla. Some coconut flakes are also nice to mix through the fruits. The crumbles I make with vegan butter, sugar and oats, so it’s gluten-free. Try serving with warm or cold vanilla pudding!
